The main characteristic of our soils, which are 40,000 years old, is the amount of organic matter that they naturally contains.

It was known that in the area of Son Fe, the soil was very rich, and in the past agriculture was carried out without any kind of water support. When we decided to plant a vineyard, we saw that it was a very rich soil, so we had to increase the planting density, unlike the lower planting density that existed in the rest of the island of Mallorca, so we decided to plant 5,000 plants per hectare of surface, as for the rest of the island it is usually around 3,500 approximately, depending on the area where they are.

Our vineyards do not have any type of water or irrigation support, so our goal, apart from transmitting a specific landscape, is to reflectall the particularities of the vintage in each of our wines.

ETZEL

Giró ros is a rare and local grape variety from the island of Mallorca. The main reason for its near extinction was its low yield, which made it unprofitable for farmers to cultivate in the past, but a few years ago it was revived.

We were fortunate to be able to plant it, and after working with it for a few years in both the winery and the vineyard, we realized that it is a very versatile variety. It doesn’t just express its aromatic potential, but also conveys and reflects the place where it is grown.

Currently, in most cases, the white wine is consumed the same year it is produced. However, we have observed that Giró ros is a great variety with significant aging potential, and that after one or two years it evolves and improves very favorably.

That is why in 2023 we decided to produce a 100% Giró Ros, but release it to the market one year after bottling, as our wine can positively evolve over many years.

It is a wine that speaks of the place where it is grown.

An estate wine made with the native varieties Giró Rubio 50% and Malvasía 50%. Fermented in stainless steel between 14 and 16ºC temperature. Subsequent aging with lees in stainless steel tanks for 4 months.

It is an old vineyard wine.

A vineyard planted in 1989 that was abandoned 5 years after planting, and was recovered in 2015.
It was reinjected with Escursach and Syrah.
It is vinified in open French oak barrels. Alcoholic fermentation below 24 ºC, and spontaneous malolactic fermentation in new French oak barrels.
